••What does that mean for the fishers? Insurgent fishers operate on an artisanal level. They go out in the morning on small boats, packed with ice and positive vibes. They return in the evening with their catch (or not!). The fish is processed quickly to retain freshness.
•• What does that mean for our fish and seas? Many of the fish we grew up enjoying are in trouble due to destructive fishing practices, like bottom trawling, drift-netting, and ghost fishing. Insurgent Cuisine harvests fish sustainably, following practices that don’t exploit resources or negatively impact the habitat or stability of the ecosystem.

We use a pricing structure that acknowledges systemic economic disparity. Money is a resource: some have less, others have more. A sliding scale pricing model, used more frequently by many organizations, addresses inequality by offering variable prices for products/services based on an individual’s income.
Our “sliding fish scale” offers three price points and invites customers to choose the price point that they feel best meets their financial means, based on their individual circumstances.
